About Chochin Shuzo | Tsushima, Aichi Prefecture
Chochin Shuzo was founded in 1868 and is situated in Tsushima City which is located at the westernmost point of Aichi Prefecture. Chochin Shuzo occupies a large space but produces a minuscule amount of sake because brewer Masayuki Kuwayama is a perfectionist who does every step of the process in the most laborious, hands-on manner.
Chochin Shuzo brews with water from a well inside the brewery, which unusually for Japan has a high mineral content. This contributes to sakes that have firm acidic spine with great ageing potential. Kuwayama-san's most famous products are the Shinbunshi range. ‘Shinbunshi’ in Japanese means to wrap in newspaper and these bottles are distinctively wrapped in the local newspaper from Tsushima City.
