When Hiroaki Oku took charge of his family brewery in 2009, he began slashing production to focus on quality. He uses only organic rice, never carbon filters, and never rushes the sakes out the door.
Like fine wines, his flagship Okushika sakes are always rested for at least three years. Unlike fine wines, they'll be in great drinking condition for years after opening. Limited availability.
