Hiroaki Oku believe in an ikkan zukuri method of brewing, meaning roughly "seedling to sake". He even makes the organic fertiliser for his home-grown rice. He waited 15 years to release this one.

What you can expect:

An incredibly flavourful brew with layers and layers, yet light on the palate.
