Akishika Shuzo goes to the extreme to care for their organic rice fields. One paddy in particular, gets special attention - a parcel called Kamimura where the prized heirloom Omachi rice is farmed organically without the use of fertiliser nor herbicide.

This "single paddy" sake is the fruit of that effort. All of the rice used in this sake is sourced exclusively from Kamimura, to really get a sense of their land's identity. 

This single paddy only yield an average of 300 bottles per season, and the sake is further held back to be aged for 4 years before release.

Extremely limited quantity available, to be savoured.

What you can expect:

The palate carries a lot of intensity, with all the complexity of the nose and a roundness and richness to the texture, as well as a very long finish.

Take your time with this sake and you will find an incredible depth of flavour.
